Of all our sensory systems our eyes are perhaps the most affected by our general health and in particular by our dietary habits. Inadequate nutrition of specific essential nutrients has been shown to have a damaging effect on our eyesight whether causing the accelerated development of cataracts or macular degeneration. The most important nutrients seem to be carotenoids that are readily available in a whole plant diet but are almost nil in an animal based diet. Other antioxidents have a beneficial effect on our sight and what research has been done points to a very similar picture. Overall it would seem that serious eyesight degeneration can be reduced by as much as 88% by simply eating a diet rich in antioxidents primarily found in a whole plant diet.
